Sabudana Vada

Sharing step by step recipe of Sabudana (Sago) Vada - one of the most famous Maharashtrian deep fried snack recipe - mainly eaten as fasting food - made with Sabudana (sago), boiled potatoes, seasoned with freshly roasted and crushed raw peanuts and spiced with green chillies and served with peanut curd chutney and spicy coriander chutney.


Sabudana Veda is a deep fried traditional snack recipe from the state of Maharashtra. This deep fried snack recipe is eaten during fasting and spiritual events. Sago is full of carbohydrates and works great on fasting days as quick in boosting energy..


Sabudana is a starchy food. Starch is taken from the pith of sago palm stems. As per Ayurveda, sago has cooling effect on the body when combined with rice..


Sabudana is full of carbohydrates and does not contain any minerals or vitamin and have low amount of fiber, calcium and iron.. Sabudana vada making is the most time consuming recipe. It requires your good time and advance planning... Right from soaking overnight, then boiling, peeling and mashing the potatoes and then roasting the raw peanuts, remove the husk which is really messy work for me, then ground to a coarse powder. Then mixing and deep frying.. . And chutney preparation. .




I'm going to serve them with sweet peanut curd coriander chutney and spicy green chutney. .


Always wash Sabudana three to four times before soaking. Soak them with sufficient water - but knowing the quantity of sufficient water for soaking them is very important - For 100 grams sago you need 20-25ml of water. Else it turns out very soggy and unpalatable after frying.

Ingredients required ⬇


1 cup Sabudana (soaked overnight) 
2 boiled potatoes 
2tsp freshly roasted crushed cumin seeds
4tbsp Freshly roasted crushed peanuts
1tsp black salt
1 Lemon (juice)
1 handful of coriander leaves
5-6 green chillies or to taste
1tbsp sama flour 
Salt to taste
Oil for frying 


Method⬇


♨ Step 1 : mis en place⬇


♦Sabudana - Washed - soaked overnight in¼ cup water.

♦Raw Peanuts - roasted - crushed 



♦Potatoes - Boiled - Peeled - Mashed

♦Cumin seeds - roasted - crushed

♦Green chillies - finely chopped 

♦Coriander leaves - finely chopped 

♦ chutney preparation 



♨ Step 2 : Make a dough


♦Mash potatoes and place them in a mixing bowl. Add all the ingredients mentioned above, blend well..



♨Step 3: Give Round shape and Refrigerate 


♦After mixing thoroughly our Vada dough is ready. Divide up into 10 equal size round balls. Press in your palms to flatten them.. Refrigerate them for 10-15 minutes 



♨ Step 4 Deep Fry




♦Heat oil in a deep frying pan. Fry Vada in hot oil until gold brown. Add 3-4 vadas at a time, don't overcrowd them.. Remove vadas on absorbing paper. Serve hot with chutney or sauce of your choice. In our house, it is dished out with spicy green chutney and sweet peanut curd chutney. ..
