Methi Malai Kaju Paneer Ki Sabzi

Today I'm going to share my favorite recipe of Fenugreek, which is stir fried and prepared in fresh coconut milk. Today's preparation will convert this simple regular methi ki sabzi to exotic food recipe. Cooked with fresh coconut milk, cottage cheese, fresh milk cream and cashew nuts won't disappoint your taste buds. This recipe is again must try recipe for Fenugreek lovers. 



Fenugreek leaves are strongly aromatic, flavorful with excellent health benefits. It is used as a vegetable, herb, spice and medicine since ancient times. Methi is full of vitamins, protein, iron and good dietary fiber. Methi works great on many women's related issues like skin inflammation and scars, menstrual cramps associated with PMS, balancing hormones and increases milk production in lactating mothers.

⚫Prep Time 12-15 min
⚫Cook Time 15-20 min
⚫Difficulty level- Easy
⚫Serves 3-4



◾Ingredients required ⬇


⚫1 Bunch Methi leaves
⚫8-10 Garlic Cloves - Finely Chopped
⚫2-3 Tomatoes 
⚫1-2 Green chillies (As per taste)
⚫100 grams grated paneer 
⚫40 grams fresh coconut
⚫2tbsp fresh milk cream
⚫8-10 cashew nuts 
⚫1 tsp cooking oil 
⚫Salt to taste




◾Method:⬇

♨ Step 1: Mise en Place


◾Peel and finely chop garlic

◾Peel and finely chop coconut . Add 1 cup water and blend and prepare a smooth paste.

◾ Make tomato puree

◾Fenugreek leaves - Discard the stems of Methi and wash the Methi leaves thoroughly. Chop the Methi leaves finely and keep it aside, until needed.



♨ Step 2: Cooking Time


◾Heat oil in a pan, add garlic, sauté for a min. 



◾Add tomato puree and green chillies. Cook for 3-5 minutes (First 2 minutes on high flame and then on slow flame for 2-3 minutes) When it is cooked and the oil is separated..



◾ add Methi leaves, saute for 2-3 minutes on high flame.


◾Add grated paneer, coconut paste, cream, cashew nuts and salt to taste, blend well and cook for 8-10 min till done.., if needed add ½ cup water..




◾ Methi Malai Kaju Paneer Sabzi is ready to dish out. Serve hot garnished with cashew nuts and grated coconut.
