Moong Dal Halwa




How to make Moong Dal Halwa, Sweet Mung Bean Pudding, Rajasthani Moong Dal Halwa Recipe 



Happy Navrati to all my friends. Today's recipe is Navratri special Moong Dal Halwa.. Sharing step by step recipe with pictures of each step. 



Moong Dal Halwa is a rich, delicious, super tasty and very popular Indian dessert delicacy from the state of Rajasthan.






This recipe is made during festivals and special occasions. Halwa is an arbic word, which means sweet. Moong dal means split yellow moong bean. It is perfect and best suited dessert recipe for the winter season.

⚫Type Sweets and Desserts 
⚫Cuisine Indian
⚫PrepTime : 25-30 min
⚫Cook Time : 35-40 Min
⚫Khoya preparation  time : 55-65 minutes 
⚫Dal soaking time 4-5 hours


◾Ingredients required 



⚫1 cup Moong Dal
⚫1 cup fresh mava (khoya) 
⚫1 cup ghee
⚫1 cup sugar
⚫1 cup water
⚫1 cup milk
⚫1tsp green cardamom powder


◾For garnish 

⚫Pistachio, almonds and edible rose petals.


◾Method 


♨ Step 1 Mise en place

Green cardamom - roasted and powdered 


Moong dal - Rinse and soak dal for 4-5 hours, then drain the water and coarsely grind with very little water. 






Sugar syrup preparation Boil equal quantity of water and sugar in a saucepan over medium heat. Continue stirring until sugar dissolves completely . Turn the high temperature to low and simmer for 3-5 minutes until it reaches one thread consistency. 




♨ Step 2 Cooking time


◾Heat ghee in a non stick fry pan. Add moong dal and roast on slow to medium flame for 12-15 minutes. This step need patience, you have to roast moong dal till it separates ghee. 






◾Add cardamom powder, milk and khoya and cook for 5-7 minutes. 






◾Add sugar syrup and Mix well and cook for 5-7 minutes on slow flame. Cook till the oil starts separating. Switch off the gas stove. 







◾Hot and yummy Halwa is ready to serve. Serve hot garnished with almonds and Pistachio and edible rose petals.



Notes
Recipe of Homemade mava (Khoya) 


Adulteration is one of the biggest problem  these days. Hence, I prefer homemade Khoya (unsweetened mava) for my diwali sweet preparation. Making Khoya at home is time consuming, but the end result is very satisfying. You need full cream milk and heavy bottomed non stick saucepan.



How to go ahead 

♨Place milk in a deep bottomed nonstick milk pan and boil the milk. Once the milk begins to boil, reduce the gas flame and simmer and cook for 45-50 minutes. Continue stirring in between, cook until milk begins to cut down more than half of the original quantity. The milk will hit a cream color. When milk thickens, switch off the gas stove at this point. From 1000 ml milk you will get 100-150 grams Khoya. For today's preparation I've  taken 1000 ml milk.
