Aam Ka Murabba



How to make Aam Ka Murabba | Mango Murabba Recipe | Recipe of Mango Preseve



Murabba, Morrabo or "morabba" is an Arabic word which means to preserve. It refers to savory or sweet jam, pickle or achar. This is most preferred and relished mango recipe by small kids as no chillies or strong spices goes in this mango preparation.



This is the best time of the year to make this Aam ka Murabba as good quality mangoes are available in this period. Murabba is mainly made from green unripe mangoes. We prefer totapuri mangoes for this recipe

☀Mango Murabba - Mom's Recipe - Mangoes are cut into cubes, cooked in thick sugar syrup and flavored with green cardamom and saffron threads.

◾ RECIPE DETAILS

⚫Cook Time 20-25 min

◾INGREDIENTS REQUIRED 

♦1 Kg Raw Mangoes - firm and unripe mangoes (peeled and de-seeded) (Preferably Totapuri)
♦ 750-800 grams or 400 - 450g Sugar 
If you want to preserve it for longer time for that take 1:1 proportion. I.e equal proportion of base ingredient and sugar. I am taking 750 grams of sugar as mango peels and seeds are going to be removed..  if you are health conscious and want to finish this within 4-5 week's time then 400-450 works best with totapuri mangoes.

♦8 Green Cardamom (roasted and crushed)
♦1/2 tsp saffron threads 



☑Method

◾Wash, Peel off the skin of mangoes and cut them into big cubes.




◾Mix saffron threads in 10ml water.


◾Boil 70-80 ml water (for 400-450 grams sugar) or 150-180 ml for (750-800g sugar) in heavy bottomed pan, add sugar, cook till you see small bubbles resembling snow flakes in sugar syrup, Add mango cubes. 



◾Cook on high flame for 2-3 minutes. Add saffron and crushed green cardamom. Simmer and cook till the syrup thickness.




◾Let it gets cool down completely.



◾Store in a sterilized glass jar or in an airtight container, can be refrigerated. Serve it as an accompaniment with Paratha or chapattis or as spread on your toast.
