Aloo Bhindi Masala Fry - (Okra Potato Masala Fry)



How to make Bhindi Aloo Masala, Okra and Potatoes cooked in garlic, fresh coriander and tomato paste.

My today's Bhindi masala recipe is most preferred Bhindi recipe in our house, and the interesting thing about this recipe is that I follow different cooking methods using the same ingredients for this Bhindi preparation which depends purely on mood, availability of time and ingredients.. Trust me, this is one of the excellent recipes of Bhindi, and even this Bhindi preparation will be savored by all those, who make faces whenever they eat Bhindi vegetable. 


Bhindi (okra) Aloo Masala Fry is very delightful, healthy and satisfying Bhindi recipe. This recipe has semi liquid consistency and goes well with chappati. . Fresh cilantro leaves, garlic, tomatoes and green chillies combo make this dish heavenly delightful, and also helps in providing good amount of fiber, vitamin C, folate, calcium and potassium.

◾Ingredients required

⚫200 grams okra (Bhindi/ladies finger)
⚫3 medium size potatoes
⚫12-15 garlic cloves
⚫1 small piece ginger
⚫1 handful coriander leaves 
⚫3-4 green chillies or as per your taste
⚫3 medium size Tomatoes
⚫3 tsp coriander powder 
⚫3 tsp Red chilly powder
⚫1tsp turmeric
⚫salt to taste
⚫2 tbsp cooking oil



Method


◾Step 1 Mise en place


♨Okra - Wash, pat dry, trim both the okra ends and vertically slit each into two halves. Don't hit a deep cut, just slit.


♨Potatoes - Washed, peeled and chopped


♨Ginger, Garlic, peeled and chopped


♨Coriander leaves washed and roughly chopped


♨Tomatoes, washed and roughly chopped.



♨Make a coarse paste of ginger, garlic, green chillies, tomatoes and fresh coriander leaves.





♨Shallow fry potatoes and okra separately. Keep aside until called for.





◾ Step 2 cooking time

♨Heat cooking oil in a pan, add coarsely grinder green paste and sauté for 3-5 minutes.


♨Add turmeric powder, coriander powder, red chilly powder and salt to taste.


♨ Mix well and then add shallow fried potatoes and okra and 1 cup water. Cover it with the lid and simmer for 8-10 minutes till liquid dries up and oil shows separately.













♨Delicious Lehsuni Aloo Bhindi Masala is ready to dish out. Serve hot with chappati.
