Puran Poli

Today's I'm going to share one of the most favorite sweet dish recipe of my mom.. I believe this is one of the best share on the very first day of the new year. 


Puran Poli is the traditional Maharashtrian sweet flat dish made during festivals.. Puran Poli is a sweet lentil stuffed Indian bread made with Chana dal, Maida, Ghee, Jaggery and flavored with Green Cardamom Powder. Puran means sweet stuffing and poli means flat bread.


The action plan for this recipe is soaking chana dal for 5-6 hours, and then cook dal till soft and at the same time avoid getting mushy, as that's what is required in this recipe.



The stuffing of jaggery and chana dal should be dry and smooth. In fact, nowadays specially designed instruments are available as well for smooth and perfect stuffing for Puran poli. But I'm going to follow this process in my mixer grinder jar.



My today's recipe is made with wheat flour and sweet stuffing is made with Split Bengal Gram, Ghee, Green Cardamom Powder and Dry Jaggery Powder.

⚫Cooking method followed in this recipe soaking, boiling, kneading and roasting..



☑ Ingredients required For 6-7 medium size Puran poli


♦For Puran (stuffing) 


⚫1 cup Chana Dal (Split Bengal Gram) 
⚫4-5 tbsp dry jaggery powder  or as per your taste
⚫½ tbsp ghee
⚫2tsp green cardamom powder 


♦For Poli (flat bread)

⚫250-300 grams Wheat flour
⚫3tbsp Maida (Refined flour)
⚫2tbsp ghee
⚫1tsp salt
⚫½tsp green cardamom powder
⚫50-100 ml Lukewarm milk




☑ Method 


♨ Step 1 - Mise en place - Soaking of Chana Dal


◾Wash and soak Chana dal in enough water for 5-6 hours.

♨ Step 2 Cook Chana dal


◾Boil Chana dal in enough water on slow to medium flame for 12-15 minutes. Take out the froth from the Chana dal as that makes dal soft and creamy.. Continue stirring in between and cook till it gets soft.




◾Check the dal by pressing in between your fingers and thumb. If it's easily got pressed means - perfect for Puran Poli stuffing. .. We need soft well cooked dal which gets mashed and at the same time not mushy. Strain the cooked Chana dal with the help of colander. Leave it to drain the water completely from the cooked Chana dal.



♨ Step 3: Make Puran Poli Stuffing 


(I'm going to use a mixer grinding jar, but you can use Puran machine for Puran poli stuffing).


◾Add cooked Chana dal, dry jaggery powder, cardamom powder, ½ tbsp ghee in a mixer grinder jar and make a smooth dough. 



◾Now take a non stick pan and cook this mixture for 3-5 minutes on slow flame. The step will make this mixture dry and very smooth and will become perfect stuffing for Puran poli.. Our Puran Poli stuffing is ready now. 


♨ Step 4 : Knead dough


◾Get hold of a dough kneading plate, combine wheat flour, salt, refined flour,and ghee. Knead into a stiff dough using enough milk. Cover and keep aside for 5 to 10 minutes. 



♨ Step 4 Roll and roast


◾Divide Chana dal stuffing prepared in step no. 3 and wheat flour dough into equal portions. And then roll out a wheat flour portion into a 6" diameter round.. Place stuffing in the centre of the circle, bring together all the sides in the centre and seal tightly.



◾Roll again into a circle of 6" diameter, apply wheat flour if required.





◾Heat a non stick tawa and roast the Puran poli on slow to medium heat.Cook both the sides until light golden brown spots appear on both the sides, apply ghee as and when needed.. Repeat this with the left over dough and stuffing 


◾Serve hot with a dollop of ghee on top..
