▫Preparation time 8-10 minutes
▫Cooking time 10-12 minutes
▫Recipe Type Side dish
▫250 grams french beans
▫a pinch of soda bicarbonate
▫1 tsp turmeric powder
▫3-4 green chilies or as per taste
▫salt to taste
▫1 tbsp ghee or cooking oil
☑For green paste
▫1 handful of cilantro leaves (Hara Daniya / coriander leaves )
▫4-5 shallots (baby onions / madras onion/ sambar onion)
▫1 tbsp sesame seeds (til)
▫2-3 tsp coriander seeds
▫1-2 tbsp desiccated coconut
▫1 tsp fennel seeds (Saunf)
▫2-3 tsp red chilly powder
▫25-30 grams Jaggery (Gur)
▫1tbsp lemon juice
▫½ cup of water
✔Step 1 Mise en place
◾French Beans - Wash - remove the strings - remove the head and tail and cut into small pieces.
◾Follow blanching method on the french beans by adding a pinch of cooking soda and sufficient water. Keep it aside until called for.
◾Green Paste - Add all the ingredients that are mentioned under green paste in a mixer grinder jar or blender and grind it to a fine paste.
✔Step 2 Cooking time
◾Heat oil or ghee in a fry pan. Add green paste and stir fry for 3-5 minutes on medium to high heat.
◾Add turmeric powder, green chilies and salt to taste. Mix it all very well.
◾Add blanched french beans, If needed, add ½ cup or a few drops of water and stir fry for 2-3 minutes or till done.
◾Our vegetable is ready to dish out. Serve hot with chappati.
