Baingan Bharta Recipe



How to make Baingan Bharta | Spicy Smoked Aubergine Recipe | Makhani Baingan Bharta.


Hello Friends, 

Today I'm going to share yet another variation of very famous south asian vegetarian dish which is prepared with smoked and mashed Aubergine aka Baingan, which is cooked in onion tomato based gravy and flavoured with Indian spices. Sharing Baingan Bharta recipe with step by step photos. 


Today's blog post recipe is shared by my dearest cousin sister. She calls this recipe as Makhani Baingan Bharta. I am in complete sync with her that this is one of the best recipe of Baingan. I Believe this recipe is actually designed for die hard fans of Baingan Ka Bharta. 


The action plan for this recipe is to roast and mash Baingan and then stir fry it in a translucent onion tomato gravy. Please note that in this dish onion and tomato are added in a very small quantity compared to the base vegetable and garam masala powder is totally skipped. And please taste the smoked eggplant. It should not be bitter in taste.

☑Recipe details

✔Brinjal roasting time 15-20 minutes 
✔Preparation time 5-10 minutes 
✔Cooking time 10-12 minutes 
✔Servings 1-2
✔Cuisine Indian 
✔Type - Vegetable - side dish 


☑Ingredients 

▫1 Baingan 
▫1 onion
▫1 tomato 
▫½tsp ginger garlic paste
▫2-3 green chillies 
▫1tsp red chilli powder
▫½ tsp turmeric powder
▫1 tsp coriander powder
▫a dash of lemon juice (optional) 
▫Salt to taste 
▫2-3 tbsp ghee



☑Method 
✔Step 1 Mise en place

◾Baingan - Wash and pat dry - Prick the Baingan with knife - grease it with the cooking oil and roast it over a direct flame for 15-20 minutes, turn occasionally, until soft and skin has blackened- Lift the Baingan off the gas stove. Leave it to cool down first. Peel off the skin and discard. Mash it very nicely with fork or potato masher. Keep it aside until called for. 









Tomatoes - finely chopped 
Onions - peeled and finely chopped
Green chillies - finely chopped.


✔Step 2 Cooking time 

◾Heat the ghee in a fry pan, add onions, stir fry until translucent. Add tomatoes, ginger garlic paste and green chillies. Cook till tomatoes turn soft and mushy. If needed, add ½ cup water. Add mashed eggplant, mix it well. Add turmeric powder, coriander powder, red chilli powder and salt to taste. Mix it well, simmer it for 3-5 minutes. Serve hot, garnished with the coriander leaves.
