Today's blog post is an Indo fusion recipe. This recipe is actually oven based recipe, but I had made this recipe on the gas stove.



The action plan for this recipe is to shallow or deep fry Aubergine's and then stuffed with flavorful and spiced tomato sauce.


It is advisable to fry Aubergine's for the perfect taste. I already tried this recipe without frying, but the end result was not good and it was simply rejected in my house. I believe some vegetables needs frying and Aubergine is one of them. But again, it's up to you as how you want to go ahead... 


Let's get started 

☑Recipe details 

◽Type - Side dish / appetizer

◽Cooking time 15-20 minutes 


☑Ingredients required 

✔3 aubergines (Baingan)
✔3 tomatoes 
✔1 onion
✔7-8 garlic cloves 
✔1-2 green chillies or as per taste
✔Handful of basil leaves
✔1 tsp Italian seasoning 
✔1 tsp red chilli powder
✔½ tsp turmeric powder
✔½tsp coriander powder
✔½ tbsp tomato ketchup 
✔Salt to taste
✔Cooking oil for frying
✔1 tbsp olive oil for tomato sauce
✔2-3 tbsp Mozzarella Cheese






Method 

✔Step 1 Mise en place

Aubergines - slice it lengthwise into halves- leave the stems intact - shallow or deep fry - keep it aside until called for.

Tomatoes - Follow Blanching process - for that make a cross at the bottom end of the tomatoes - Carefully, put them into a vessel of boiling water - cook for 2-3 minutes - turn off the heat - immediately remove the blanched tomatoes and place them in cold water for a minute. Drain the water - Peel the tomato skin and toss out. Roughly chop - put them in blender and make a puree. Keep it aside until called for.






Onions - peeled and roughly chopped.


Garlic - peeled and roughly chopped


✔Step 2 Sauce preparation 


◾Heat oil over medium heat in a saucepan. Add chopped garlic and stir fry for 8-10 seconds. 


◾Add onions and stir fry until soft. 




◾Add tomato puree and basil leaves and cook it on high fire for 2-3 minutes. 


◾Add Italian seasoning, red chilli powder, turmeric powder, coriander powder and salt to taste. Mix it all well. If needed add ⅓ cup of water.


◾Add tomato ketchup,mix it well and switch off the gas stove. Our sauce is ready.



✔Step 3 stuff and cook

◾Fill each aubergine half with the tomato sauce. Sprinkle the top of each aubergine with mozzarella cheese. Transfer gently in sauce pan and cook it on slow flame until cheese melts. Garnish it with fresh coriander leaves. 




◾Serve immediately and enjoy!
