Today's blog post is a winter special methi ki sabzi. Did you know this season is the best season for methi leaves. This recipe is super scrumptious and my all time favorite food. Sharing recipe with step by step pics.

Lehsuni Aloo Methi Tamatar Ki Sabzi is the most religiously cooked vegetable in my house. I believe this is one of the excellent recipes of fenugreek leaves. Trust me, after trying Methi leaves recipe this way, you'll never ever look for any other methi recipe. This is heavenly delightful, healthy, flavorful and must have Sabzi in this season.



The plan of action for today's recipe is that first stir fry methi leaves and boiled potatoes in spicy garlic, tomato sauce and flavor it with coconut powder and green chilies.

Recipe details 

  • Preparation time 20-25 minutes 
  • Cooking time 15-20 minutes

Ingredients required 

  • 1 bunch methi leaves
  • 2 Potatoes 
  • 15-20 garlic cloves 
  • 4-5 green chillies or as preferred 
  • 4-5 Tomatoes 
  • 1-2 tbsp coconut milk powder or desiccated coconut 
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder 
  • Salt to taste
  • 2-3 tbsp cooking oil



Method 


♨ Step 1 Mise en place

◾Potatoes - cut them into small cubes - boil till almost done - keep it aside until called for.




◾Methi Leaves - remove the stems - coarsely chopped - sprinkle salt and turmeric over it - toss it - keep aside for 10-15 minutes. Then soak it in water for 2-3 minutes, wash under running tap water - drain the water - keep it aside until called for.







◾Garlic - Peeled - coarsely chopped 




◾Tomatoes & green chillies - wash and pat dry- roughly chop - puree it





♨ Step 2 Cooking time


◾In a fry pan, heat oil add chopped garlic, stir fry for 10-12 seconds. 



◾Add green chilli and tomato puree.




◾Cook it on high flame for 3-5 minutes.



◾Add methi leaves, stir fry for 2-3 minutes. 





◾Add boiled potatoes and very little water. 




◾Add turmeric powder, red chilli powder and salt to taste. Mix it well. Cook it on slow flame for a min or two.



◾Add coconut milk powder. Mix it well. Cover it with lid, Cook it on slow flame for 5-7 minutes or until done.







◾Serve hot with your favorite indian bread.
