Meaning of Dopiaza

Dopiaza also spelled as Do pyaza is a Persian word which means "Two Onions". This term is mainly used for South Asian Curry recipes. The term do pyaza have some interesting meanings. It means either double quantity of onion is used Or onion is used in two forms or two types of onions are added in two stages... Sounds confusing!πŸ€”πŸ™„ Don't worry, ☺ Naam mein Kya rakha hai..πŸ€“πŸ˜‹πŸ˜†Instead, simply enjoy the dish.. I mean as long as, recipe is tempting and delectable.. Give any name which is comfortable to you.. Even simple Suran Sabji is perfectly okay..



In today's recipe, we need a good quantity of onions. For 250 grams of Suran, I'm going to add 500 grams of onions. Chopping of onions in today's recipe is equally important, we don't want finely or very finely chopped onions but thick and roughly chopped onions.. 



Let's start with recipe details 

  • Preparation time 12-15 min
  • Cooking time 15-20 min
  • Servings 3-4
  • Cuisine Indian

Ingredients required 

  • 500 grams (6-7) onions 
  • 250 grams suran
  • 4 Tomatoes 
  • 3-4 green chillies 
  • 5-6 curry leaves
  • 2-3 garlic cloves 
  • 1 small piece ginger
  • 2-3 tsp red chilli powder
  • 1-2 tsp turmeric powder
  • 2-3 tsp coriander powder
  • 1 tsp garam masala powder 
  • Salt to taste
  • 5-6 tbsp Cooking oil for shallow frying and cooking 




Method 


Step 1 Mise en place 

◾Suran - peeled - blanched and then shallow fry until golden brown







◾Onions - peeled - roughly chopped 



◾Tomato g³ paste - combine roughly chopped tomatoes, curry leaves, ginger, garlic & green chillies and make a coarse paste






♨ Step 2 Cooking time 

◾Heat oil in a frying pan. Add the onions. Cook till light golden brown and nicely cooked.





◾Add tomato g³ paste and ¼ cup or very little water. Mix it all well. Allow it cook for 5-7 or till it gets soft.






◾Add coriander powder, turmeric powder, red chilli powder, garam masala powder and salt to taste, mix it well. Cook it for a min or two.






◾Add fried Suran pieces, if needed, add very little water.





◾Passover it with lid, cook till done.




◾Serve hot with your favorite Indian bread or steamed rice.
