Jowar Paratha

Hello friends

Today I'm going to share one more winter special flat bread recipe. It is made with sorghum flour, onions, green chillies & fresh green garlic chives. Sharing recipe with step by step pics.





Fresh Green Garlic aka Spring garlic is the star ingredient of this recipe. It adds color, crunch and delectable taste to this flat bread.






Did you know Sorghum aka Jowar is rated among the top healthy grains in the world. It is also known as "Treasure Trove" of foods. It is a good source of calcium, protein, dietary fiber, iron, phosphorus and thiamine. The common names of this grain are jowar, jwar, juvar, joovar.

Let's get started 

Recipe details 

  • Preparation time 8-10 min
  • Cooking time 10-12 min
  • Servings 2
  • Cuisine - Indian 

Ingredients required 

  • 220-250 grams Jowar flour
  • Handful of green garlic chives
  • 4-5 green chillies or as preferred 
  • 1-2 tbsp ghee for dough kneading 
  • 1 onion - finely chopped 
  • 2-3 tbsp coriander leaves - finely chopped 
  • Salt to taste 
  • 60-80 ml water for dough kneading or as required 
Note : Please add green chillies in good quantity to enjoy this flat bread. 


Method 


💁Step 1 Mise en place 


◾Onion - peeled - finely chopped 

◾Green chillies - washed - finely chopped 

◾Coriander leaves - washed - finely chopped 

◾Garlic Chives - wash it - pat dry - finely chopped 


💁Step 2 Dough Kneading 

◾In a dough kneading plate, combine jowar flour, finely chopped onions, green chilies, green garlic chives, cilantro leaves and salt to taste.




◾Add 1-2 tbsp ghee, mix it well.



◾Add water as needed and make a soft and pliable dough. As you all know gluten is missing in this jowar flour so it will not be as pliable like wheat flour. Leave it to rest for 3-5 minutes. 







💁Step 3 Pat it and roast 

◾Divide dough into equal sized balls.



◾Take a muslin cloth, plastic sheet or napkin. Put a ball of dough on it. 



◾With the help of your fingers and palm, gently pat it in a circular motion and flatten it and make a flat circle. Gently remove it from the napkin.





◾Heat a tawa on medium flame, place the jowar roti over it. Cook it on medium flame, flipping over to cook on both sides until light brown spots appear on jowar paratha, use ghee as an when required. Serve hot with curd and papad..
