I'm back with one more Indian flat bread recipe. After posting fresh green garlic thepla recipe, I feel, it would be unfair, if I skip to post this recipe. 😊 Yeh recipe to banti hai.. Sharing recipe with step by step photos.

Methi thepla is a staple food of Gujarat. It is very much versatile in nature . It is not only a great travel food but this can also be eaten as breakfast or a snack or anytime of a day.

What is Methi Thepla?

Methi thepla is a type of unleavened shallow fried flat bread made with whole wheat flour, gram flour, fenugreek leaves, ghee, yogurt and flavored with Indian spices. 



Today's methi thepla recipe is a must try recipe for this winter season. I did few additions in this authentic methi thepla recipe like along with yogurt I have also added fresh milk cream and ghee at the dough kneading time.


Another important thing to follow in this recipe is to sprinkle salt over fenugreek leaves and then soak it in fresh water for 8-10 minutes and after that wash them under running tap water. Addition of salt is purely optional and can be skipped, but I believe it works great and reduce the bitterness of Methi leaves.

Recipe details 

  • Preparation time 10-15 minutes 
  • Cooking time 15-20 minutes 
  • Number of Theplas 12-15
  • Cuisine Indian 

Ingredients required 

  • 300 - 350 grams wheat flour 
  • 2-3 tbsp besan - gram flour 
  • 2 handfuls of methi leaves
  • 1-2 tbsp green garlic methi chives
  • 1-2 tsp sesame seeds (Til)
  • 1 tsp carom seeds (ajwain)
  • 2-3 tsp red chilli powder
  • 1 tsp turmeric powder
  • 2-3 tbsp ghee for dough kneading 
  • 1-2 tbsp fresh milk cream (optional)
  • 1-2 tbsp yogurt 
  • Salt to taste
  • Water to knead the dough
  • Ghee or oil



Method 


💁Step 1 Mise en place 



◾Methi leaves - pluck the leaves and discard the stems. Sprinkle 1-2 tsp salt over it, soak them in a large pot of water and keep aside for 10-12 minutes. Rinse under running tap water and then finely chop it. Keep it aside until called for.






◾Green garlic chives - wash - pat dry and cut into 1" pieces.




💁Step 2 Dough Kneading 

◾Get hold of a dough kneading plate, add wheat flour, besan, red chilly powder, turmeric powder, sesame seeds and carom seeds. Mix it all well. 



◾Add methi leaves and fresh green garlic chives.




◾Add ghee and cream. Rub in the flour until it resembles breadcrumbs. 




◾Add curd to it and mix well.





◾Now slowly and gradually add water and knead a soft and pliable dough. Cover and leave it to rest for 5-10 minutes. 



◾Knead the dough briefly, if needed. Divide the dough into equal size balls.




💁Step 3 Roll and roast

◾Take a dough ball, flatten them with the palm of your hands. Dip into wheat flour bowl to coat, roll each ball of dough into a thin disc.








◾Heat a tawa or griddle pan on medium heat. Place the rolled out circle over it. Apply very little oil or ghee as an when required, cook till lightly browned on both sides.











◾ Serve hot with ghee roasted green chillies, pickle or curd.
