Pav Bhaji is one of the most popular and hottest selling street food not only in Mumbai but almost everywhere in India.



Today's recipe is a super duper hit not just in my house, but it is very much loved and appreciated by my friends and near and dear ones. 



Pav bhaji for me is the perfect blend of veggies, spices and fat content added in this recipe. 




Does your homemade pav bhaji taste as good as Restaurant pav bhaji..  Did you know the basic main difference between homemade Pav bhaji and ordered from a restaurant or street food vendor.. Any guesses? Think... 



I'm sure many of you think and want to say use of giant tawa for making Pav bhaji where as at home we use frypan...




Well, I agree with you, but I'm afraid this is not the correct answer.. 


No more suspense... the main big reason of difference is the use of good fat content.. Yes, you have heard it right! It's because they use butter in a very good quantity and where as in homes we don't use butter or any other fat content to that extent. More so artificial food coloring is also added.. I'm going to use natural food color substitute.. 


Let's get started 

Recipe details 

  • Preparation time 25-30 minutes 
  • Cooking time 15-20 minutes 
  • Servings 5-6

Ingredients required 

  • 5-6 medium sized potatoes 
  • 4-5 medium sized onions 
  • 5-6 Tomatoes 
  • 80-100 grams cauliflower 
  • 1-2 carrots
  • 50 grams peas
  • 8-10 french beans
  • 6-8 green chillies or as preferred 
  • 1 capsicum
  • ½ beet root
  • 1 lemon
  • 1-2 tbsp ginger garlic paste 
  • Handful of coriander leaves
  • 2-3 tsp coriander powder
  • 2-3 tsp Kashmiri red chilli powder
  • 1 tsp turmeric powder 
  • 3-4 tsp pav bhaji masala powder
  • Salt to taste 
  • Cooking oil
  • Butter
  • Pav bun breads



Method 

Step 1 Mise en place - Vegetable Cutting 


Potatoes - peeled - cut into cubes

Onions - peeled - finely chopped 

Tomatoes - finely chopped or puree it

French Beans - roughly chopped 

Carrots - peeled and cut into cubes

Capsicum - finely chopped 

Beetroot - peeled - roughly chopped 


Green chillies - finely chopped 

Ginger garlic - wash -  peel -  make coarsely ginder paste



Step 2 cooking time


◾Heat the oil & butter in the pressure cooker. Add onions and stir fry until lightly brown. 




◾Add ginger garlic paste and green chilies. Stir fry for just a min or so. 




◾Add the tomato puree.. Mix well, cook it on high flame until soft and pulpy.






◾Add coriander powder, red chilli powder, turmeric powder and just very little pav bhaji masala and remaining quantity of pav bhaji masala will be added lastly with melted butter. 




◾Add all the chopped veggies and water (approximately 450-500 ml) Mix it all very well.








◾Pass over the pressure cooker with lid and allow 3-5 whistles and then simmer it for 2-3 minutes.



◾Set aside the pressure cooker to cool down naturally and then open the pressure cooker, mashup with the help of Pav Bhaji masher adjust the consistency of Pav Bhaji according to your preference.  If needed, add water and simmer for 5-7 minutes. 





◾Lastly add lemon juice, and melted butter with pav bhaji masala over the top.. Mix it well.. Our yummilicious Pav Bhaji is ready to dish out  You can skip this step -  or add less quantity of butter... but 50-60 grams butter is very much needed for the excellent pav bhaji taste.. 











How to Serve


◾Slice the pav horizontally into halves. Heat the pan on slow flame. Add butter, sprinkle red chilli powder and a pinch of pav bhaji masala powder. Cook sliced pav on both the sides till light brown. 


◾Serve it hot with chopped onions and lemon wedges.
