It is very delicious and popular Indian vegetable dish cooked with shallow fried okra and then cooked in spicy garlic tomato gravy. Sharing recipe with step by step photos...

✅Recipe details 

  • Preparation time 8-10 minutes 
  • Cooking time 12-15 minutes 
  • Servings 3-4
  • Cuisine Indian 

✅Ingredients required 

  • 350 grams okra - bhindi 
  • 1-2 potatoes
  • 3 tomatoes 
  • 10-12 Garlic cloves 
  • 2-3 green chillies or as preferred 
  • 8-10 curry leaves 
  • 2 tsp coriander powder 
  • 1 tsp turmeric powder
  • 1tsp red chilly powder or as preferred
  • Salt to taste
  • 30-35 ml cooking oil for shallow frying



Method


✅Step 1 Mise en place 

◾Okra - wash - pat dry with absorbent paper or kitchen napkin - trim the edges - cut into ½" pieces



◾Potatoes - peel - cut into small pieces - keep them in a bowl of water to avoid discoloration.

◾Tomatoes - puree it.


◾Garlic - peel - finely chopped 


◾Green chillies - roughly chopped 




✅Step 2 Shallow fry bhindi and potatoes 


◾Heat oil in a frying pan over medium heat. Add potatoes and bhindi pieces. Shallow fry till they become crisp and golden brown. Drain on an absorbent paper and keep it aside until called for.







✅Step 3 gravy preparation 


◾Heat 1tsp oil in a fry pan. Add the finely chopped garlic.



◾Stir fry on a slow flame for a min or two, when the garlic is lightly fried, add tomato puree Stir fry for about a minute or two. Add curry leaves and green chillies.


◾Cook it for 3-5 minutes.



◾Add all the dry ingredients i.e red chilly powder, coriander powder, turmeric powder and salt to taste. Mix it all well.


◾Add shallow fried potato and bhindi pieces. Mix well, cook it on slow flame for 2-3 minutes.
